Zucchini, much appreciated in the kitchen as a side dish, is not only a tasty vegetable but also highly healthy for our body; thanks to its enormous nutritional value we can place it in the circle of highly effective foods against a good part of problems that are sometimes dangerous for our own health. Zucchini can also represent a single dish: this is the case of stuffed zucchini. In this regard, we suggest a very tasty one stuffing for zucchini with spelled following our step by step recipe.
The recipe we propose does not include the use of animal derivatives, an ideal dish for those who follow a vegetarian style. The only recommendation is to use only organic zucchini.
Stuffing for zucchini, what we need
- 6 organic zucchini
- 150 grams of spelled
- 1 onion
- 2 carrots
- 1 clove of garlic
- 1 sprig of celery
- A handful of sultanas
- 150 grams of leerdammer cheese
- Grated cheese
- Oil, salt and pepper
Stuffing for zucchini, the preparation
- Cook the spelled in boiling water for about 45 minutes: as soon as the grains are al dente, drain
- Peel a carrot and onion, remove the filaments from the celery then chop the vegetables coarsely
- Blanch the courgettes for a minute then tick them and cut them in half lengthwise
- With the help of a teaspoon, empty the pulp from the zucchini and make a hollow
- Clean the clove of garlic and brown it in a non-stick pan with a drizzle of oil
- After a few moments, remove the garlic and add the pulp of the zucchini, the sultanas and the chopped vegetables: as soon as the vegetables are golden, pour a ladle of water
- When the water has dried, pour the spelled into the pan and sauté over high heat, stirring constantly, for a few minutes
- Correct with salt and let everything cool
- Transfer the mixture to a bowl and add the diced leerdammer and mix everything well
- Fill the zucchini with the freshly prepared mixture
- Arrange the courgettes on a lightly greased pan, sprinkle with grated cheese and a drizzle of oil
- Cook the zucchini in a preheated oven at 180 degrees for about 25 minutes
- In the meantime, peel the other carrot then cut it into julienne strips and arrange some on the plates
- Serve the stuffed carrots on a bed of carrots
