A goodvegetarian menuit starts with an appetizer and ends with dessert. After providing you with therecipevegetarian lasagna, vegetable meatballs and vegetarian penne, we continue with anotherfirst course: tagliatelle with vegetable sauce.
Vegetarian noodles, the recipe
Ingredients for avegetarian first course
- 2 onions
- 1 clove of garlic
- 1 courgette
- 2 yellow peppers
- 3 ripe tomatoes
- 300 grams of noodles
- salt as required
- a tablespoon of olive oil
- 500 ml of vegetable broth
- 4 tablespoons of fresh cheese
- a spoonful of chopped tomatoes
- pepper as required
- aromatic herbs of Provence
- a spoonful of tasty spices
- Thyme for garnish

- Peel the onion and garlic. Finely chop the garlic and cut the onion into discs.
- Clean the courgettes and peppers. Cut the courgettes into discs and cut the peppers into very thin strips.
- Wash and clean the tomatoes and cut them into wedges.
- Cook the pasta for a few minutes (cooking must finish in the pan, to understand the timing read the cooking times specified on the package).
- Sauté garlic and onion for about 3-4 minutes, add courgette, peppers and tomato. Brown again.
- Add the vegetable broth and cook for another 5 minutes. Mix the cheese and the tomato pulp and cook for 5 minutes over medium heat.
- Season with salt and pepper.
- Dissolve the spices in a spoonful of water and add to the sauce.
- Remove the raw pasta and finish cooking in your sauce.
- Put the seasoned noodles on the plate and garnish with thyme leaves.
